Blackberry Recipes

Blackberry season is here and they seem to be everywhere. I decided to release my inner Seamus Heaney and went blackberry picking in the country side (the local golf course in my case).

I collected so many berries i was able to make three tubs of jam and a tub of blackberry nice ream. Both recipes are vegan friendly and very tasty!

Blackberry Jam:

Ingredients;

- Punnet of blackberries

- Tablespoon of agave

- Tablespoon of cinnamon

Put the blackberries into a large pot and heat on the stove using a medium heat, this will create the jam consistincy and will release the sweetness of the blackberries.

As the blackberries are cooking add the agave and cinnamon, mix in using a whisk and this will help to break up the blackberries and will give your jam a Christmas flavour.

Once your mixture looks like jam let it cool and place in container of your choice and store in the fridge or freeze for a later date.

 

Blackberry Nicecream

- two frozen bananas

- punnet of blackberries

- tablespoon of agave/honey

Simply add all of the ingredients to your blender and blend until you have a nice creamy texture, can eat straight away or put it in your freezer for later.
