Kick'n Pumpkin Soup Recipe

Soup season is finally here and I have started with my kick'n pumpkin soup. (Butternut squash can be used instead of the pumpkin)

Ingredients:

- 1 pumpkin / butternut squash

- a red chilli

- ginger

- garlic

- can of coconut milk

To start you are going to prepare your pumpkin by chopping off the top and gutting out the insides.

Once the pumpkin is prepared, take the insides of the pumpking and fry them with grated ginger, chopped garlic and chopped chilli.

Once everything in the pan is sauteed, add the can co coconut milk and leave to simmer for 10 minutes.

When all the ingredients have infused together in the pan, pour into a food processor/blender or use a hand blender so your soup will have a nice creamy texture.
